How to make Colorful Squash Casserole

If you're looking for a simple recipe that can be served as either a main dish or a side then you should try this colorful squash casserole. This dish can be served with white rice or as a side to baked chicken or turkey.

*Substitue low-fat cream of mushroom soup to make this a vegetarian dish.

RECIPE INGREDIENTS

5 medium yellow squash

1 can low-fat cream of chicken soup

4 oz bread crumbs

1 medium onion diced

8 oz low-fat sour cream

1 medium carrot shredded

1 small jar pimentos

1 tbs butter or margarine

 

DIRECTIONS

  1. Slice and boil the squash until cooked tender.
  2. Drain the squash and mash well.
  3. Add the cream of chicken soup, onion, sour cream, carrots and pimento.
  4. Season to your taste with salt and pepper.
  5. Melt butter in a 2 quart casserole dish.
  6. Pour squash mixture into the dish and and sprinkle bread crumbs on top.
  7. Bake in a 350 degree F preheated oven for 40-45 minutes. Serve hot and enjoy.
