How to make Colorful Squash Casserole

If you're looking for a simple recipe that can be served as either a main dish or a side then you should try this colorful squash casserole. This dish can be served with white rice or as a side to baked chicken or turkey.
*Substitue low-fat cream of mushroom soup to make this a vegetarian dish.
RECIPE INGREDIENTS
5 medium yellow squash
1 can low-fat cream of chicken soup
4 oz bread crumbs
1 medium onion diced
8 oz low-fat sour cream
1 medium carrot shredded
1 small jar pimentos
1 tbs butter or margarine
DIRECTIONS
- Slice and boil the squash until cooked tender.
- Drain the squash and mash well.
- Add the cream of chicken soup, onion, sour cream, carrots and pimento.
- Season to your taste with salt and pepper.
- Melt butter in a 2 quart casserole dish.
- Pour squash mixture into the dish and and sprinkle bread crumbs on top.
- Bake in a 350 degree F preheated oven for 40-45 minutes. Serve hot and enjoy.
